🍖 Country Fried Pork Chops with Bacon Gravy (GF)

🍗 Ingredients:

For the Pork Chops:

  • 4 boneless pork chops (½-inch thick, or butterfly thicker chops)

  • 1 cup gluten-free all-purpose flour (or almond flour for grain-free)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 large egg

  • ¼ cup buttermilk (or almond milk + 1 tsp vinegar)

  • Oil for frying (avocado, peanut, or vegetable oil)

For the Bacon Gravy:

  • 6 slices bacon, chopped

  • 2 tbsp reserved bacon grease (or butter)

  • 2 tbsp gluten-free flour

  • 1 ½ cups whole milk (or unsweetened almond milk)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • Salt to taste


🔥 Instructions:

1️⃣ Fry the Bacon & Prep Pork Chops

  • Cook chopped bacon in a skillet until crispy. Remove bacon, leaving 2 tbsp grease in the pan (save the rest for gravy).

  • In a shallow bowl, mix GF flour, garlic powder, onion powder, paprika, salt, and pepper.

  • In another bowl, whisk egg + buttermilk.

2️⃣ Bread & Fry the Pork Chops

  • Dredge each chop in flour mix → egg wash → flour again.

  • Heat ½ inch of oil in the same skillet (medium-high). Fry chops 3-4 mins per side until golden and 145°F internal temp. Drain on a wire rack.

3️⃣ Make the Bacon Gravy

  • In the bacon grease (add butter if needed), whisk in GF flour to make a roux (1-2 mins).

  • Slowly pour in milk, whisking constantly until thickened.

  • Stir in garlic powder, onion powder, black pepper, and crispy bacon. Salt to taste.

4️⃣ Serve & Enjoy!

  • Smother pork chops with gravy. Optional: Garnish with green onions or extra bacon.
