Cranberry Orange Bread with Simple Glaze

Ingredients:

Bread:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 1/4 cup fresh orange juice
  • 1 1/2 cups fresh or frozen cranberries, halved

Simple Glaze:

  • 1 cup powdered sugar
  • 2-3 tbsp fresh orange juice

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Prepare Wet Ingredients: In a large bowl, cream together the sugar and butter until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the sour cream, milk, vanilla extract, orange zest, and orange juice until well combined.
  4. Combine and Fold: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the cranberries.
  5. Bake: Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  7. Prepare Glaze: In a small bowl, whisk together the powdered sugar and orange juice until smooth and pourable. Add more orange juice if needed to reach the desired consistency.
  8. Glaze the Bread: Once the bread is completely cool, drizzle the glaze over the top. Let the glaze set for a few minutes before slicing and serving.
