Ingredients:

For the Cookies:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup dried cranberries, finely chopped
  • Zest of 1 large orange (about 1 tbsp)
  • 2 tbsp fresh orange juice

Optional Glaze:

  • 1 cup powdered sugar
  • 2-3 tbsp fresh orange juice
  • Orange zest, for garnish

Directions:

  1. Prepare the dough:
    • In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.
    • Mix in the vanilla extract, orange zest, and orange juice until combined.
    • Add the flour and salt, mixing until the dough starts to come together. Stir in the chopped dried cranberries.
  2. Form the dough:
    • Divide the dough in half and shape each half into a log about 2 inches in diameter. Wrap the logs tightly in plastic wrap and refrigerate for at least 2 hours, or until firm.
  3. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  4. Slice and bake:
    • Unwrap the chilled dough logs and slice into 1/4-inch thick rounds. Place the rounds on the prepared baking sheet, spacing them about 1 inch apart.
    • Bake for 10-12 minutes, or until the edges are just starting to turn golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  5. Optional glaze:
    • In a small bowl, whisk together the powdered sugar and orange juice until smooth. Drizzle the glaze over the cooled cookies and sprinkle with additional orange zest for a pop of color and flavor.
  6. Serve and enjoy:
    • Once the glaze sets, the cookies are ready to serve. Store them in an airtight container at room temperature for up to a week.
