Cranberry & Spinach Stuffed Chicken Breasts with Brie 🍗🍓🧀

Juicy chicken breasts stuffed with earthy spinach, sweet cranberries, and melted brie, finished with a glossy honey-balsamic glaze. Elegant enough for a dinner party, easy enough for weeknights!


Ingredients

(Serves 4)

For the Chicken:

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • ½ cup fresh spinach, chopped
  • ⅓ cup dried cranberries
  • 4 oz brie cheese, sliced (rind optional)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper

For the Glaze:

  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • ¼ tsp Dijon mustard

Optional Garnish:

  • Fresh thyme sprigs
  • Cracked black pepper

Instructions

1. Prep the Chicken

  1. Butterfly the breasts: Slice horizontally through the thickest part, leaving one edge intact (like a book). Open and flatten gently with a meat mallet or rolling pin (~½-inch thick).
  2. Season: Rub with olive oil, garlic powder, thyme, salt, and pepper.

2. Stuff & Roll

  1. Layer spinach, cranberries, and brie slices in the center of each breast.
  2. Fold the chicken over the filling, securing with toothpicks or kitchen twine.

3. Sear & Bake

  1. Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear chicken 2-3 minutes per side until golden.
  2. Transfer skillet to a preheated 375°F (190°C) oven. Bake 15-18 minutes until internal temp reaches 165°F (74°C).

4. Make the Glaze

  1. In a small saucepan, simmer honey, balsamic vinegar, and Dijon mustard for 2-3 minutes until slightly thickened. Brush over chicken.

5. Serve

  • Remove toothpicks, drizzle with extra glaze, and garnish with fresh thyme.

Tips for Success

✔ Brie note: Keep the rind for texture or trim it for milder flavor.
✔ No oven-safe skillet? Sear in a pan, then transfer to a baking dish.
✔ Stuff ahead: Assemble up to 4 hours in advance (store chilled).
