Cranberry & Spinach Stuffed Chicken Breasts with Brie 🍗🍓🧀
Juicy chicken breasts stuffed with earthy spinach, sweet cranberries, and melted brie, finished with a glossy honey-balsamic glaze. Elegant enough for a dinner party, easy enough for weeknights!
Ingredients
(Serves 4)
For the Chicken:
- 4 boneless, skinless chicken breasts (about 6 oz each)
- ½ cup fresh spinach, chopped
- ⅓ cup dried cranberries
- 4 oz brie cheese, sliced (rind optional)
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
For the Glaze:
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- ¼ tsp Dijon mustard
Optional Garnish:
- Fresh thyme sprigs
- Cracked black pepper
Instructions
1. Prep the Chicken
- Butterfly the breasts: Slice horizontally through the thickest part, leaving one edge intact (like a book). Open and flatten gently with a meat mallet or rolling pin (~½-inch thick).
- Season: Rub with olive oil, garlic powder, thyme, salt, and pepper.
2. Stuff & Roll
- Layer spinach, cranberries, and brie slices in the center of each breast.
- Fold the chicken over the filling, securing with toothpicks or kitchen twine.
3. Sear & Bake
- Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear chicken 2-3 minutes per side until golden.
- Transfer skillet to a preheated 375°F (190°C) oven. Bake 15-18 minutes until internal temp reaches 165°F (74°C).
4. Make the Glaze
- In a small saucepan, simmer honey, balsamic vinegar, and Dijon mustard for 2-3 minutes until slightly thickened. Brush over chicken.
5. Serve
- Remove toothpicks, drizzle with extra glaze, and garnish with fresh thyme.
