Cream and Berry-Filled Pastry Balls Recipe

Ingredients:

For the Pastry:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs

For the Cream Filling:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Berry Filling:

  • 1 cup mixed berries (strawberries, raspberries, blueberries, etc.)
  • 2 tablespoons sugar (adjust based on sweetness of berries)

For Topping:

  • Powdered sugar for dusting
  • Fresh berries for garnish (optional)

Instructions:

1. Prepare the Pastry:

  • Preheat your oven to 400°F (200°C).
  • In a saucepan, combine water and butter over medium heat. Bring to a boil.
  • Add the flour and salt all at once, stirring vigorously until the mixture pulls away from the sides of the pan and forms a ball. Remove from heat.
  • Allow to cool for a few minutes, then add the eggs one at a time, mixing well after each addition until smooth.

2. Pipe the Pastry Balls:

  • Transfer the dough to a piping bag fitted with a large round tip (or use a zip-top bag with a corner snipped off).
  • Line a baking sheet with parchment paper. Pipe small balls (about 1 inch in diameter) onto the parchment, spacing them about 2 inches apart.
  • Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed. Do not open the oven door during baking.

3. Prepare the Berry Filling:

  • In a small bowl, combine the mixed berries and sugar. Mash gently with a fork to release some juice. Set aside to macerate for about 10 minutes.

4. Make the Cream Filling:

  • In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

5. Assemble the Pastry Balls:

  • Once the pastry balls are cool, carefully cut a small slit in the side of each ball to create an opening.
  • Using a piping bag or small spoon, fill each pastry ball with whipped cream and a spoonful of the berry mixture.

6. Serve:

  • Dust with powdered sugar and garnish with additional fresh berries if desired.
