Creamed Potatoes and Peas

Your husband’s new favorite comfort food! Silky, creamy potatoes with sweet peas in a luscious sauce—so good, you might hope the kids don’t want seconds. 😉


INGREDIENTS

  • 2 lbs red potatoes, boiled until tender, then diced

  • ¼ cup (½ stick) butter

  • 3 tbsp all-purpose flour

  • 1½ tsp salt

  • ¼ tsp black pepper

  • 1½ cups whole milk (or half-and-half for extra richness)

  • 1 cup frozen peas, thawed (or fresh steamed peas)

  • Optional upgrades:

    • 2 cloves garlic, minced (sauté with butter)

    • ½ tsp onion powder

    • Chopped fresh parsley or chives for garnish


INSTRUCTIONS

1. Cook the Potatoes:

  • Boil whole, unpeeled potatoes until fork-tender (~15 mins). Drain, cool slightly, then dice into ½-inch cubes.

2. Make the Cream Sauce:

  1. In a large skillet, melt butter over medium heat.

  2. Whisk in flour, salt, and pepper to form a roux (cook 1 minute until bubbly).

  3. Gradually pour in milk, whisking constantly until thickened (~3-5 mins).

3. Combine & Serve:

  • Gently fold in potatoes and peas, heating through (2-3 mins).

  • Taste and adjust seasoning. Garnish with fresh herbs if desired.

🍽 Pair With: Roast chicken, meatloaf, or grilled sausages.
