Creamy Alfredo Sauce

Ingredients:

  • ½ cup (1 stick / 115g) unsalted butter
  • 1 cup (240ml) heavy cream (or half-and-half for lighter sauce)
  • 4 garlic cloves, minced (or 1 tsp garlic powder)
  • 1 ½ cups (150g) freshly grated Parmesan cheese (plus extra for garnish)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ¼ tsp nutmeg (optional, for depth)
  • 2 tbsp cream cheese (optional, for extra creaminess)
  • ¼ cup (60ml) pasta water (if needed for thinning)

Instructions:

  1. Melt butter – In a saucepan over medium-low heat, melt the butter.
  2. Sauté garlic – Add minced garlic and cook for 30 seconds until fragrant (don’t let it brown).
  3. Add cream – Pour in heavy cream, stirring constantly. Bring to a gentle simmer (do not boil).
  4. Cheese it up – Gradually whisk in Parmesan cheese until fully melted and smooth.
  5. Season – Stir in salt, pepper, nutmeg, and cream cheese (if using). Simmer 2-3 mins until thickened.
  6. Adjust consistency – If too thick, add a splash of pasta water or milk.
  7. Serve immediately over fettuccine, chicken, or veggies!

  • For a lighter version, use milk + 1 tbsp flour (whisk well).
