Creamy Angel Chicken Pasta

Ingredients:

  • 2 tbsp olive oil
  • 4 boneless, skinless chicken breasts (or thighs)
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp butter
  • 12 oz angel hair pasta (or your favorite pasta)
  • Fresh parsley (optional, for garnish)
  • Extra grated Parmesan (optional, for serving)

Instructions:

1. Cook the Pasta:

  • Cook the angel hair pasta according to package instructions. Drain and set aside, reserving about 1/2 cup of pasta water.

2. Prepare the Chicken:

  • Season the chicken breasts (or thighs) with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside to rest.

3. Make the Creamy Sauce:

  • In the same skillet, add the butter and minced garlic. Sauté for 1-2 minutes until the garlic is fragrant.
  • Add the chicken broth and Italian seasoning, stirring to combine. Let it simmer for 2 minutes to reduce slightly.
  • Lower the heat and add the heavy cream and Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.

4. Combine the Chicken and Pasta:

  • Slice the cooked chicken into thin strips or bite-sized pieces.
  • Add the drained pasta to the skillet with the creamy sauce. Toss to coat the pasta in the sauce. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
  • Add the sliced chicken on top and toss everything together.

5. Serve:

  • Serve the creamy angel chicken pasta in bowls, garnished with fresh parsley and extra Parmesan cheese, if desired.

Tips:

  • Chicken Alternatives: You can use boneless chicken thighs or even shrimp as an alternative to chicken breasts.
  • Add Veggies: Feel free to add some sautéed spinach, mushrooms, or sun-dried tomatoes for extra flavor.
  • Make it Lighter: Use half-and-half or milk in place of heavy cream for a lighter version.
