Creamy Caesar Chicken with Roasted Asparagus 🍗🥬

This one-pan wonder combines juicy chicken, crispy asparagus, and rich Caesar flavors for a quick, elegant meal ready in 30 minutes!


Ingredients

For the Chicken & Asparagus:

  • 2 boneless, skinless chicken breasts (or thighs)

  • 1 bunch asparagus, tough ends trimmed

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp salt

  • ½ tsp black pepper

  • ¼ cup grated Parmesan cheese (plus extra for garnish)

For the Caesar Sauce:

  • ¼ cup mayonnaise

  • 2 tbsp grated Parmesan

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp Worcestershire sauce

  • 1 small garlic clove, minced (or ½ tsp garlic powder)

  • ½ tsp anchovy paste (optional, for authentic flavor)

  • 2 tbsp water (to thin if needed)

Optional Garnish:

  • Lemon wedges

  • Fresh parsley

  • Croutons


Instructions

1. Prep & Season:

  • Preheat oven to 400°F (200°C).

  • Place chicken and asparagus on a baking sheet. Drizzle with olive oil, then sprinkle with garlic powder, salt, and pepper.

2. Make the Caesar Sauce:

  • Whisk together mayonnaise, Parmesan, lemon juice, Dijon, Worcestershire, garlic, and anchovy paste (if using). Thin with water if needed.

3. Assemble & Bake:

  • Spread half the Caesar sauce over the chicken.

  • Sprinkle ¼ cup Parmesan over everything.

  • Bake for 20–25 minutes (until chicken hits 165°F/74°C and asparagus is tender-crisp).

4. Serve:

  • Drizzle with remaining sauce. Garnish with extra Parmesan, lemon, and parsley.

🔥 For crispier chicken: Broil 2–3 minutes at the end.
🍋 Extra tang? Add lemon zest to the sauce.
