Creamy Chicken Cordon Bleu Casserole with Crunchy Topping

Ingredients:

  • For the casserole:
    • 4 cups cooked chicken, shredded or cubed (rotisserie chicken works great!)
    • 1 1/2 cups diced ham
    • 1 (10.5 oz) can cream of chicken soup (or homemade if you prefer)
    • 1 cup sour cream
    • 1 cup shredded Swiss cheese
    • 1 cup shredded mozzarella cheese
    • 1/2 cup chicken broth (or water)
    • 1 tablespoon ** Dijon mustard**
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon black pepper
    • Salt to taste
    • 1 teaspoon fresh parsley (optional, for garnish)
  • For the topping:
    • 1 1/2 cups Panko breadcrumbs
    • 1/4 cup melted butter
    • 1/2 cup grated Parmesan cheese
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon black pepper

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Prepare the Casserole:

  • In a large mixing bowl, combine the shredded or cubed chicken, diced ham, cream of chicken soup, sour cream, chicken broth, Dijon mustard, garlic powder, onion powder, black pepper, and Swiss cheese. Mix until everything is well combined.
  • Transfer the mixture into a greased 9×13-inch baking dish and spread it out evenly.
  • Sprinkle the shredded mozzarella cheese evenly over the top of the chicken mixture.

3. Make the Crunchy Topping:

  • In a small bowl, mix together the Panko breadcrumbs, melted butter, Parmesan cheese, garlic powder, and black pepper. Stir to combine until the breadcrumbs are evenly coated with the butter and cheese.
  • Sprinkle the breadcrumb mixture evenly over the top of the casserole.

4. Bake:

  • Bake the casserole uncovered for about 30-35 minutes, or until the casserole is bubbly and the topping is golden brown and crispy.
  • If the topping is getting too dark before the casserole is fully heated, you can cover it with aluminum foil for the last 10 minutes of baking.

5. Garnish and Serve:

  • Once out of the oven, sprinkle fresh parsley on top for a pop of color (optional).
  • Let the casserole sit for 5 minutes before serving to allow it to set.

Tips:

  • Meat Variations: You can switch the ham for bacon for a smokier flavor or use turkey for a different twist.
  • Cheese: If you prefer a sharper taste, you can use Gruyère cheese instead of Swiss.
  • Make Ahead: You can assemble the casserole a day ahead and store it in the fridge. Just bake it when you’re ready to eat.
  • Extra Crunch: For an even crunchier topping, you can add a handful of crushed crackers to the Panko breadcrumb mix.
