Creamy Garlic Butter Chicken & Rotini in Parmesan Sauce

Ingredients:

  • 12 oz rotini pasta
  • 1 lb boneless, skinless chicken breast (or thighs), cut into bite-sized pieces
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 ½ cups heavy cream
  • 1 cup grated Parmesan cheese
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • Fresh parsley (optional, for garnish)

Instructions:

1. Cook the Pasta:

  • Cook the rotini pasta according to package instructions in salted water until al dente. Drain and set aside, reserving about 1/2 cup of pasta cooking water.

2. Cook the Chicken:

  • Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  • Add the bite-sized pieces of chicken, seasoning with salt and pepper, and cook until browned on all sides and fully cooked through (about 7-8 minutes). Remove the chicken from the skillet and set aside.

3. Make the Sauce:

  • In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the chicken broth and stir, scraping up any browned bits from the bottom of the skillet.
  • Stir in the heavy cream and bring to a simmer. Let it cook for 3-4 minutes until the sauce starts to thicken slightly.

4. Combine the Sauce and Pasta:

  • Add the Parmesan cheese to the sauce and stir until it melts and the sauce becomes smooth and creamy.
  • Add the cooked chicken back into the skillet and stir to coat in the sauce.
  • Add the cooked rotini pasta to the skillet and toss to coat. If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency.

5. Serve:

  • Taste and adjust seasoning with additional salt and pepper if necessary.
  • Serve the creamy garlic butter chicken and rotini in bowls, garnished with fresh parsley if desired.
