Creamy Garlic Salmon Pasta

Servings: 2-3
Prep Time: 10 mins
Cook Time: 20 mins

Ingredients:

  • 2 salmon fillets, cut into chunks

  • 8 oz fettuccine pasta (or any pasta of choice)

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • Salt & black pepper to taste

  • ½ tsp red pepper flakes (optional, for heat)

  • 1 tsp lemon juice (optional, for brightness)

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta: Boil the fettuccine in salted water until al dente. Reserve ½ cup pasta water, then drain and set aside.

  2. Sear the salmon: Heat olive oil in a large skillet over medium-high heat. Season salmon chunks with salt & pepper, then sear for 2-3 mins per side until golden. Remove and set aside.

  3. Make the sauce: In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.

  4. Combine cream & cheese: Pour in heavy cream and stir, then add Parmesan cheese. Simmer for 2-3 mins until slightly thickened.

  5. Bring it together: Add cooked pasta, salmon, and a splash of reserved pasta water if needed to loosen the sauce. Toss gently.

  6. Season & serve: Add lemon juice, red pepper flakes (if using), and adjust salt & pepper. Garnish with fresh parsley.

Tips:

  • For extra flavor, add a pinch of Italian seasoning or dried basil.

  • Substitute half the cream with chicken broth for a lighter sauce.

  • If the sauce thickens too much, add a little more pasta water.
