Creamy Lemon and Orange Dessert

Ingredients:

  • 300 ml of milk
  • 1 lemon (zest and juice)
  • 1 teaspoon vanilla sugar (or liquid vanilla essence)
  • 3 oranges (juice)
  • 2 egg yolks
  • 2 tablespoons sugar
  • 4 tablespoons cornstarch (Maizena)
  • ½ can of condensed milk
  • 100 g ricotta cheese
  • 80 ml whipped cream

Instructions:

  1. Prepare the fruit:

    • Zest the lemon and set the zest aside.
    • Squeeze the juice from the lemon and the 3 oranges. Set aside the juices.
  2. Make the creamy base:

    • In a saucepan, whisk together the milk, lemon juice, orange juice, egg yolks, sugar, and cornstarch. Place the saucepan over medium heat and stir constantly. Continue heating until the mixture thickens and starts to bubble slightly (about 3-4 minutes).
  3. Add condensed milk and flavoring:

    • Once thickened, add the condensed milk, lemon zest, and vanilla sugar (or essence). Stir until well combined and cook for another minute to ensure everything is incorporated.
  4. Incorporate the ricotta:

    • In a separate bowl, whisk the ricotta cheese until smooth. Gently fold the ricotta into the warm citrus cream mixture, blending until smooth and creamy.
  5. Whip the cream:

    • In a separate bowl, whip the cream until soft peaks form. Carefully fold the whipped cream into the creamy mixture to lighten it up.
  6. Chill and serve:

    • Pour the mixture into individual serving cups or bowls. Let it chill in the fridge for at least 30 minutes to allow the flavors to meld and the texture to set.
    • Garnish with additional lemon zest, orange slices, or fresh mint before serving.

Tips:

  • Extra texture: Add crushed graham crackers or shortbread cookies for a fun crust or topping.
  • Sweetness adjustment: Taste the mixture before chilling. If you prefer a sweeter dessert, add more sugar or condensed milk as desired.
  • Dairy-free version: For a dairy-free alternative, use coconut milk and a dairy-free ricotta or cashew cream.

This Creamy Lemon and Orange Dessert is perfect for any occasion, from a light after-dinner treat to a refreshing afternoon snack! Enjoy the citrusy goodness! 🍊🍋
