Creamy Lemon Squares 🍋

These ultra-smooth, tangy-sweet lemon squares feature a buttery shortbread crust and a luscious lemon curd filling—like sunshine in every bite! Perfect for spring, summer, or whenever you need a citrusy pick-me-up.


Ingredients

For the Crust:

  • 1 cup (125g) all-purpose flour

  • ¼ cup (30g) powdered sugar

  • ½ cup (115g) cold unsalted butter, cubed

  • Pinch of salt

For the Lemon Filling:

  • 3 large eggs, room temperature

  • 1 cup (200g) granulated sugar

  • ½ cup (120ml) fresh lemon juice (about 3 lemons)

  • 1 tbsp lemon zest

  • 2 tbsp all-purpose flour

  • ½ tsp baking powder

  • Pinch of salt

For Dusting:

  • Powdered sugar


Instructions

1️⃣ Prep: Preheat oven to 350°F (175°C). Line an 8×8-inch (20x20cm) baking pan with parchment paper, leaving overhang for easy removal.

2️⃣ Make the Crust:

  • In a bowl, mix flour, powdered sugar, and salt.

  • Cut in cold butter until the mixture resembles coarse crumbs.

  • Press firmly into the pan. Bake for 15-18 mins until lightly golden.

3️⃣ Make the Filling:

  • Whisk eggs and sugar until smooth.

  • Add lemon juice, zest, flour, baking powder, and salt. Mix well.

4️⃣ Bake:

  • Pour filling over the hot crust.

  • Bake 20-25 mins until set (edges should be lightly golden; center may jiggle slightly but will firm up as it cools).

5️⃣ Cool & Chill:

  • Let cool completely in the pan, then refrigerate for at least 2 hours (or overnight) to set.

6️⃣ Serve:

  • Lift out using parchment, dust with powdered sugar, and cut into squares.

✔ Use fresh lemons—bottled juice won’t give the same bright flavor!
✔ Don’t overbake the filling—it should be custardy, not rubbery.
✔ Chill thoroughly for clean slices.
