Ingredients
*(Serves 2-4)*
-
8 oz spaghetti (or linguine)
-
2 cooked lobster tails (or 1 lb lobster meat)
-
3 tbsp unsalted butter
-
3 garlic cloves, minced
-
1/4 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
-
1 cup heavy cream
-
1/2 cup grated Parmesan cheese
-
1/4 tsp red pepper flakes (optional, for heat)
-
1 tbsp fresh lemon juice
-
2 tbsp chopped fresh parsley
-
Salt & black pepper to taste
Instructions
-
Cook the Pasta: Boil spaghetti in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
-
Prepare the Lobster: If using whole lobster tails, remove meat from shells and chop into bite-sized pieces.
-
Make the Sauce:
-
In a large skillet, melt butter over medium heat.
-
Add garlic and sauté until fragrant (about 30 seconds).
-
Pour in white wine and simmer for 2 minutes to reduce slightly.
-
Stir in heavy cream, Parmesan, red pepper flakes, salt, and black pepper. Simmer for 3-4 minutes until slightly thickened.
-
-
Combine Everything:
-
Add cooked spaghetti to the sauce, tossing to coat. If needed, add a splash of reserved pasta water to loosen the sauce.
-
Gently fold in lobster meat and lemon juice. Heat for 1-2 minutes (don’t overcook the lobster).
-
-
Garnish & Serve: Sprinkle with fresh parsley and extra Parmesan. Serve immediately with a side of crusty bread!
