Creamy Peas and Noodles 🍜🌱

(A creamy, buttery, and slightly cheesy pasta dish with tender peas!)

Ingredients:

  • 8 oz (225g) egg noodles (or pasta of choice)
  • 1 ½ cups frozen peas (or fresh)
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 ½ cups milk (whole or 2%)
  • ½ cup heavy cream (or half-and-half)
  • ½ cup grated Parmesan cheese
  • ¼ tsp nutmeg (optional)
  • Salt & black pepper to taste
  • Fresh parsley or chives for garnish

Instructions:

1️⃣ Cook the Noodles & Peas:

  • Boil the egg noodles in salted water until al dente (about 6-7 mins).
  • In the last 2 minutes of cooking, add the peas to blanch them. Drain and set aside.

2️⃣ Make the Creamy Sauce:

  • In a large skillet, melt butter over medium heat.
  • Add garlic and sauté for 30 seconds until fragrant.
  • Whisk in flour and cook for 1 minute to make a roux.
  • Slowly pour in milk and cream, whisking constantly until smooth.
  • Simmer for 3-4 mins until slightly thickened.

3️⃣ Combine & Finish:

  • Stir in Parmesan cheese, nutmeg, salt, and pepper.
  • Add the drained noodles and peas, tossing to coat in the sauce.
  • Cook for another 1-2 mins until everything is heated through.

4️⃣ Serve & Enjoy!

  • Garnish with fresh parsley or chives and extra Parmesan if desired.

Variations & Tips:

✔ Extra Protein? Add cooked chicken, bacon, or ham.
✔ Lighter Version? Use half milk and skip the cream.
✔ Vegan Option? Use plant-based butter, almond milk, and nutritional yeast instead of cheese.
