🧀🌶️ Creamy Pepper Jack Chicken & Sausage Pasta (One-Pot Wonder!)

This spicy, cheesy, and ultra-creamy pasta combines tender chicken, smoky sausage, and a rich Pepper Jack sauce—all made in one pot for easy cleanup! Ready in 30 minutes.


⏲️ Prep Time: 10 mins | Cook Time: 20 mins | Serves: 6


📝 Ingredients

  • 1 lb chicken sausage, sliced (andouille or spicy Italian)

  • 1 lb boneless, skinless chicken breasts, diced

  • 12 oz rotini or penne pasta

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 1½ cups shredded Pepper Jack cheese

  • ½ cup grated Parmesan cheese

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • Fresh parsley, chopped (garnish)


👩🍳 Instructions

1️⃣ Brown the Meats

  1. Heat olive oil in a large pot/Dutch oven over medium-high heat.

  2. Add sausage slices and cook until browned (~3 mins). Remove and set aside.

  3. Add chicken, season with salt/pepper, and cook until no longer pink (~5 mins). Remove and set aside.

2️⃣ Sauté Aromatics

  • In the same pot, cook onion until soft (~3 mins).

  • Add garlic and Italian seasoning, stir for 30 seconds until fragrant.

3️⃣ Cook Pasta in Creamy Broth

  1. Pour in chicken broth and heavy cream, scraping up browned bits.

  2. Add uncooked pasta, stir, and bring to a simmer.

  3. Cover and cook 12-15 mins, stirring occasionally, until pasta is al dente.

4️⃣ Add Cheese & Meats

  1. Reduce heat to low, stir in Pepper Jack and Parmesan until melted.

  2. Return sausage and chicken to the pot, heat through (~2 mins).

5️⃣ Garnish & Serve

  • Top with fresh parsley and extra black pepper.

✔ Spice level? Use mild Pepper Jack or add cayenne for extra heat.
✔ Short on time? Use pre-cooked chicken (add with cheese).
✔ Thicker sauce? Simmer uncovered for 2-3 mins.
