Creamy Slow-Cooked Beef Coconut Curry

Ingredients:

For the Curry:

  • 2 lbs (900g) beef chuck or stew meat, cut into 1.5-inch cubes

  • 1 tbsp oil (coconut or vegetable)

  • 1 large onion, finely chopped

  • 4 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 2 tbsp curry powder (or 1 tbsp garam masala + 1 tsp turmeric)

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • ½ tsp cayenne (adjust for heat)

  • 1 (14oz) can coconut milk (full-fat for creaminess)

  • 1 (14oz) can diced tomatoes (or tomato purée for smoother sauce)

  • 1 tbsp brown sugar or palm sugar

  • 1 tbsp fish sauce (or soy sauce for depth)

  • 1 cinnamon stick or 1 star anise (optional)

  • Salt to taste

For Serving:

  • Steamed jasmine or basmati rice

  • Garlic naan (store-bought or homemade)

  • Fresh cilantro, lime wedges, sliced red chili

Instructions:

  1. Sear the beef: Heat oil in a pan over medium-high. Brown beef in batches (3-4 mins per side). Transfer to slow cooker.

  2. Sauté aromatics: In the same pan, cook onion until soft (5 mins). Add garlic, ginger, and spices; stir 1-2 mins until fragrant.

  3. Combine in slow cooker: Add onion mixture, coconut milk, tomatoes, sugar, fish sauce, and cinnamon stick to beef. Stir.

  4. Slow cook: Cover and cook on LOW for 6-8 hrs (or HIGH for 3-4 hrs) until beef is fork-tender.

  5. Adjust seasoning: Discard cinnamon stick. Skim excess fat if needed. Add salt or lime juice to taste.

Stovetop Option: Simmer covered on low heat for 1.5-2 hrs, stirring occasionally.

To Serve:

  • Ladle curry over steamed rice.

  • Garnish with cilantro and chili. Serve with warm garlic naan for dipping.

Tips:

  • For extra richness: Stir in 1 tbsp coconut cream or cashew butter at the end.

  • Vegetable add-ins: Try spinach, potatoes, or bell peppers in the last 30 mins of cooking.

  • Make ahead: Flavors deepen overnight—reheat gently with a splash of water.
