Crescent Roll-Ups with Sausage, Egg, and Cheese

Ingredients:

  • 1 can (8 oz) crescent roll dough
  • 1/2 lb breakfast sausage (ground or links, cooked and crumbled)
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tbsp butter or oil (for cooking the eggs)
  • Optional: chopped green onions or herbs for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cook the Sausage: If using ground sausage, cook it in a skillet over medium heat until browned and cooked through. If using sausage links, cook and then slice them into small pieces. Remove from heat and set aside.
  3. Scramble the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. In the same skillet, melt the butter or heat the oil over medium heat. Pour in the egg mixture and scramble until just set but still soft. Remove from heat.
  4. Prepare the Crescent Rolls: Unroll the crescent roll dough and separate it into triangles as indicated on the package.
  5. Assemble the Roll-Ups: On each triangle, add a small spoonful of cooked sausage, a few scrambled eggs, and a sprinkle of cheese. Roll up from the wide end to the pointed end, tucking in the filling as you go.
  6. Bake: Place the roll-ups on the prepared baking sheet, seam side down. Bake for about 12-15 minutes or until golden brown.
  7. Serve: Let them cool for a few minutes before serving. Garnish with chopped green onions or herbs if desired.

Tips:

  • Feel free to customize the filling with other ingredients like bell peppers, spinach, or different types of cheese.
  • These roll-ups can be made ahead and stored in the fridge; just reheat in the oven or microwave before serving.
