Here’s a delicious and elegant Crinkle Feta Cheese Phyllo (Filo) Pie recipe—a crispy, flaky, and savory pastry filled with creamy feta cheese. It’s perfect as an appetizer, snack, or side dish!

Ingredients:

  • 8-10 sheets phyllo dough (thawed if frozen)

  • 1 ½ cups feta cheese, crumbled

  • ½ cup ricotta or cream cheese (for creaminess)

  • 1 egg, lightly beaten

  • 2 tbsp fresh dill or parsley, chopped

  • 1 tsp dried oregano

  • ½ tsp black pepper

  • ½ cup unsalted butter, melted (or olive oil for a lighter version)

  • 1 tbsp sesame seeds or nigella seeds (optional, for topping)

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a baking sheet or line with parchment paper.

  2. Make the filling – In a bowl, mix feta, ricotta, egg, herbs, oregano, and black pepper until well combined.

  3. Prepare the phyllo sheets – Lay one sheet flat and brush lightly with melted butter. Place another sheet on top and repeat until you have 4-5 stacked layers.

  4. Add filling & crinkle – Spoon the feta mixture in a line along the longer edge of the phyllo stack. Fold the sides inward, then roll loosely (not too tight, to allow for crinkles).

  5. Shape into a spiral – Coil the roll into a loose spiral (like a snail shape) and place on the baking sheet. Repeat with remaining phyllo and filling.

  6. Brush with butter – Generously brush the tops with melted butter and sprinkle with sesame seeds (if using).

  7. Bake for 25-30 minutes until golden brown and crispy.

  8. Cool slightly before serving—best enjoyed warm!

Tips:

  • Keep phyllo covered with a damp towel to prevent drying.

  • Variations: Add spinach, sun-dried tomatoes, or olives to the filling.

  • Make mini versions for bite-sized appetizers.
