Crispy Black Bean Tacos

Ingredients:

For the Black Bean Filling:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For the Tacos:

  • Corn tortillas (or flour tortillas if preferred)
  • Vegetable oil (for frying)
  • Optional toppings: diced avocado, shredded lettuce, chopped tomatoes, diced onion, cilantro, lime wedges, salsa, or cheese

Instructions:

  1. Prepare the Black Bean Filling:
    • In a medium bowl, mash the black beans with a fork, leaving some chunks for texture. Stir in cumin, chili powder, garlic powder, salt, and pepper.
  2. Fry the Tortillas:
    • In a skillet, heat a small amount of vegetable oil over medium heat.
    • Lightly fry each corn tortilla for about 30 seconds on each side until they are warm and pliable. Remove and drain on paper towels.
  3. Crisp the Tortillas:
    • In the same skillet, add more oil as needed and fry the tortillas again for about 1-2 minutes on each side until they are crispy and golden. Drain on paper towels again.
  4. Fill the Tacos:
    • Spoon the black bean mixture into the crispy tortillas, filling them generously.
  5. Add Toppings:
    • Top with your choice of diced avocado, lettuce, tomatoes, onion, cilantro, and any other desired toppings. Squeeze fresh lime juice over the top.
  6. Serve:
    • Serve immediately with salsa or your favorite hot sauce on the side.

Tips:

  • Customize: Feel free to add other ingredients like roasted corn, jalapeños, or cheese for extra flavor.
  • Make Ahead: You can prepare the black bean filling in advance and store it in the fridge for up to 3 days.
