Crispy Pork Chops with Potatoes

Ingredients:

For the Pork Chops:

  • 4 bone-in pork chops (about 1 inch thick)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 cup olive oil (for frying)

For the Potatoes:

  • 1 lb. baby potatoes, halved
  • 2 tbsp. olive oil
  • 1 tsp. dried rosemary
  • 1 tsp. garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes:
    • In a large bowl, toss the halved baby potatoes with olive oil, dried rosemary, garlic powder, salt, and pepper.
    • Spread the potatoes in a single layer on a baking sheet.
    • Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, stirring halfway through.
  3. Prepare the Pork Chops:
    • In a shallow dish, combine the flour with salt and pepper.
    • In another shallow dish, place the beaten eggs.
    • In a third shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, and paprika.
  4. Bread the Pork Chops:
    • Dredge each pork chop in the flour, shaking off any excess.
    • Dip the pork chop into the beaten eggs, allowing any excess to drip off.
    • Coat the pork chop with the panko mixture, pressing gently to adhere.
  5. Cook the Pork Chops:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the breaded pork chops to the skillet and cook for 3-4 minutes per side, or until golden brown and crispy.
    • Transfer the pork chops to a baking sheet and finish cooking in the preheated oven for 10-12 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Serve:
    • Serve the crispy pork chops with the roasted potatoes.
    • Garnish with chopped fresh parsley.
