Crispy Southern Fried Okra

Ingredients

  • 1 lb (450g) fresh okra, sliced into 1/2-inch pieces
  • 1 cup (120g) cornmeal
  • 1/2 cup (60g) all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper (optional, for heat)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup (120ml) buttermilk (or regular milk)
  • Oil for frying (e.g., vegetable or peanut oil)

Instructions

  1. Prepare the okra:
    • Wash and dry the okra thoroughly. Slice it into 1/2-inch pieces.
  2. Make the coating:
    • In a large bowl, mix the cornmeal, flour, garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and black pepper.
  3. Coat the okra:
    • Place the okra slices in a bowl and pour the buttermilk over them. Toss to coat evenly.
    • Transfer the okra to the cornmeal mixture, a few pieces at a time, and toss until well coated.
  4. Heat the oil:
    • In a deep skillet or Dutch oven, heat about 1-2 inches of oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.
  5. Fry the okra:
    • Carefully add the coated okra to the hot oil in small batches, making sure not to overcrowd the pan. Fry for 2-3 minutes, or until golden brown and crispy.
    • Use a slotted spoon to remove the okra and drain on paper towels.
  6. Serve:
    • Serve the fried okra hot with your favorite dipping sauce, such as ranch dressing, remoulade, or hot sauce.

Tips

  • Air fryer option: For a healthier version, spray the coated okra with cooking oil and air fry at 400°F (200°C) for 10-12 minutes, shaking halfway through.
  • Make it gluten-free: Use gluten-free flour instead of all-purpose flour.
  • Add-ins: Mix in a pinch of Cajun seasoning or smoked paprika for extra flavor.
