Crispy Vegetable Fritter

Here’s a tasty recipe for crispy vegetable fritters that are perfect as a snack or appetizer!

Ingredients

  • For the Fritters:
    • 1 cup grated zucchini (about 1 medium zucchini)
    • 1 cup grated carrots (about 1-2 medium carrots)
    • 1/2 cup corn (fresh or frozen)
    • 1/2 cup finely chopped bell pepper (any color)
    • 1/4 cup green onions, chopped
    • 1/2 cup all-purpose flour
    • 1/4 cup cornmeal (optional, for extra crunch)
    • 2 large eggs
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • Salt and pepper to taste
    • Oil for frying (vegetable or olive oil)

Instructions

  1. Prepare the Vegetables:
    • Grate the zucchini and carrots, then squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  2. Mix the Batter:
    • In a large bowl, combine the grated zucchini, grated carrots, corn, bell pepper, and green onions.
    • Add the flour, cornmeal (if using), eggs, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined. The mixture should be thick and hold together.
  3. Heat the Oil:
    • In a large skillet, heat about 1/4 inch of oil over medium-high heat. To check if the oil is ready, drop a small amount of batter into the oil; it should sizzle.
  4. Fry the Fritters:
    • Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon. Do not overcrowd the pan.
    • Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  5. Serve:
    • Serve the fritters warm with your favorite dipping sauce, such as yogurt sauce, sour cream, or a spicy aioli.

Tips

  • Feel free to mix in other vegetables like shredded cabbage, spinach, or grated sweet potato.
  • To make them healthier, you can bake the fritters at 400°F (200°C) for about 20-25 minutes, flipping halfway through.
