Crock Pot Pepper Steak

Ingredients:

  • 1.5 to 2 lbs flank steak or sirloin, sliced into thin strips
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 bell peppers (any color), sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons cornstarch (optional, for thickening)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon ground ginger (or fresh ginger, minced)
  • 1 teaspoon black pepper
  • Salt to taste
  • Cooked rice or noodles for serving

Instructions:

  1. Prepare the Meat:
    • In a skillet, heat the olive oil over medium-high heat. Add the sliced steak and sear for 2-3 minutes until browned (this step is optional but adds flavor).
  2. Add Ingredients to Crock Pot:
    • In the crock pot, combine the seared steak, sliced onion, bell peppers, minced garlic, beef broth, soy sauce, Worcestershire sauce, ginger, black pepper, and salt. Stir to combine.
  3. Cook:
    • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meat is tender.
  4. Thicken the Sauce (Optional):
    • If you prefer a thicker sauce, mix the cornstarch with a few tablespoons of cold water to make a slurry. Stir this into the crock pot during the last 30 minutes of cooking.
  5. Serve:
    • Serve the pepper steak over cooked rice or noodles, spooning the sauce over the top.

  • Vegetable Variations: You can add other vegetables like mushrooms or carrots for more flavor and nutrition.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
