  • 3 cups chicken broth

  • 1 cup water

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 1 tsp dried thyme

  • ½ tsp rosemary (optional)

  • ½ tsp black pepper

  • 1 tsp salt (adjust to taste)

  • 1 bay leaf

  • 1 can (10.5 oz) cream of chicken soup (or homemade substitute*)

For the Dumplings:

  • 2 cups biscuit mix (like Bisquick)

  • ⅔ cup milk

  • 1 tbsp dried parsley (for flavor & color)

(No canned soup? Mix 2 tbsp butter + 2 tbsp flour + ½ cup milk + ½ cup broth.)*


Instructions:

  1. Add stew ingredients to the crockpot (except dumpling ingredients). Stir.

  2. Cook on LOW 6-8 hours (or HIGH 3-4 hours) until chicken shreds easily.

  3. Shred chicken with forks and return to pot. Discard bay leaf.

  4. Make dumplings: Mix biscuit dough (Bisquick + milk + parsley). Drop spoonfuls onto the stew.

  5. Cover and cook on HIGH 30 mins (no peeking—steam cooks the dumplings!).

  6. Serve hot (the dumplings will soak up broth as they sit).
