Crockpot Christmas Crack

Ingredients:

  • 1 cup unsalted butter (2 sticks)
  • 1 cup brown sugar, packed
  • 1 sleeve saltine crackers (about 40 crackers)
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped nuts (optional, e.g., pecans or walnuts)
  • 1 tsp vanilla extract (optional)

Instructions:

  1. Prepare the Crockpot:
    • Line the bottom of your crockpot with aluminum foil for easier cleanup. You can also use parchment paper.
  2. Layer the Crackers:
    • Place a single layer of saltine crackers on the bottom of the crockpot.
  3. Make the Toffee:
    • In a saucepan over medium heat, melt the butter and brown sugar together. Stir continuously until the mixture comes to a boil. Allow it to boil for about 3-4 minutes without stirring.
  4. Pour Over Crackers:
    • Remove the toffee mixture from heat and stir in the vanilla extract if using. Pour the hot toffee evenly over the layer of saltine crackers in the crockpot.
  5. Cook on Low:
    • Cover the crockpot and cook on low for about 2 hours. Check occasionally to ensure it doesn’t overcook.
  6. Add Chocolate:
    • After 2 hours, remove the lid and sprinkle the chocolate chips over the top. Cover again and let it sit for about 15-20 minutes until the chocolate melts.
  7. Spread the Chocolate:
    • Once the chocolate is melted, use a spatula to spread it evenly over the toffee and crackers. If using, sprinkle the chopped nuts over the top.
  8. Cool and Set:
    • Let the mixture cool in the crockpot for a bit, then transfer it to the refrigerator to set completely (about 1-2 hours).
  9. Break into Pieces:
    • Once set, break into pieces and store in an airtight container.

Tips:

  • You can drizzle melted white chocolate over the top for an extra festive touch.
  • Feel free to customize with other toppings like crushed candy canes or sprinkles.
