Crockpot Creamy Potato & Hamburger Soup Recipe

Ingredients

  • 1 pound ground beef (or turkey)
  • 4-5 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2-3 carrots, diced
  • 3-4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream (or half-and-half)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 1 cup frozen peas or corn
  • Fresh parsley for garnish (optional)

Instructions

  1. Brown the Ground Beef:
    • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add Ingredients to the Crockpot:
    • In your crockpot, combine the browned ground beef, diced potatoes, chopped onion, diced carrots, minced garlic, beef broth, thyme, salt, and pepper. If you’re adding peas or corn, include them now.
  3. Cook:
    • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
  4. Make It Creamy:
    • About 30 minutes before serving, stir in the heavy cream and shredded cheddar cheese. Let it heat through, adjusting seasoning as needed.
  5. Serve:
