Here’s a delicious recipe for Crockpot French Onion Meatloaf with Melted Swiss Cheese! This comfort dish combines the rich flavors of French onion soup with juicy meatloaf, topped off with gooey Swiss cheese.

Ingredients:

For the Meatloaf:

  • 2 lbs ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1 packet (1 oz) French onion soup mix
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce

For the Topping:

  • 2 cups caramelized onions (about 3 large onions)
  • 1 cup beef broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 6–8 slices Swiss cheese

Instructions:

  1. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, French onion soup mix, eggs, milk, chopped onion, minced garlic, black pepper, and Worcestershire sauce.
    • Mix gently with your hands until well combined, being careful not to overmix.
    • Shape the mixture into a loaf and place it on a large sheet of aluminum foil. Wrap the foil around the meatloaf to form a packet.
  2. Caramelize the Onions:
    • In a skillet, cook the sliced onions over medium heat with a bit of butter or olive oil until golden brown and caramelized. This may take 20–30 minutes. Stir occasionally.
  3. Assemble in the Crockpot:
    • Add the caramelized onions and beef broth to the bottom of the crockpot.
    • Place the foil-wrapped meatloaf on top of the onion mixture.
  4. Cook:
    • Cover and cook on low for 6–8 hours or high for 3–4 hours, until the meatloaf is fully cooked (internal temperature of 160°F/71°C).
  5. Finish the Sauce:
    • Carefully remove the meatloaf and unwrap it, leaving it in the crockpot.
    • Stir the cornstarch slurry into the onion mixture to thicken it. Let cook for another 10–15 minutes on high.
  6. Add Swiss Cheese:
    • Place slices of Swiss cheese on top of the meatloaf. Cover the crockpot for 5–10 minutes, or until the cheese is melted.
  7. Serve:
    • Slice the meatloaf and spoon the onion gravy over the top. Serve with mashed potatoes or crusty bread to soak up the sauce.
