Crockpot Meatloaf 🍖🔥

Juicy, tender meatloaf cooked to perfection in your slow cooker—no oven needed! Packed with flavor and smothered in a sweet-tangy glaze.


🍽️ Ingredients

  • 1 ½ lbs (680g) ground beef (80% lean for best texture)

  • ½ cup (50g) breadcrumbs (or crushed crackers)

  • 1 small onion, finely chopped

  • 1 egg, beaten

  • ½ cup (120ml) milk

  • 2 tbsp Worcestershire sauce

  • 1 tsp garlic powder

  • 1 tsp dried thyme

  • 1 tsp salt

  • ½ tsp black pepper

For the Glaze:

  • ¼ cup (60g) ketchup

  • 2 tbsp brown sugar

  • 1 tbsp mustard (Dijon or yellow)

  • 1 tsp apple cider vinegar


👩🍳 Instructions

  1. Mix the Meatloaf:

    • In a large bowl, combine ground beef, breadcrumbs, onion, egg, milk, Worcestershire sauce, garlic powder, thyme, salt, and pepper.

    • Use hands to mix just until combined (overmixing makes it tough).

  2. Shape & Place in Crockpot:

    • Form into a loaf shape (about 8×4 inches).

    • Place on a foil sling (for easy removal) or directly into the slow cooker.

  3. Make the Glaze:

    • Mix ketchup, brown sugar, mustard, and vinegar. Spread over the top.

  4. Cook:

    • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours (internal temp: 160°F/71°C).

  5. Serve:

    • Lift out with foil sling. Let rest 10 mins before slicing.
