Ingredients

  • For the Casserole:
    • 1 package (16 oz) frozen pierogi (cheese and potato or your choice)
    • 1 lb kielbasa, sliced
    • 1 medium onion, chopped
    • 2 cups shredded cheese (cheddar or your preference)
    • 1 cup sour cream
    • 1 can (10.5 oz) cream of mushroom soup (optional)
    • 1 cup chicken broth (or vegetable broth)
    • 1 teaspoon garlic powder
    • Salt and pepper to taste
    • Fresh parsley or chives for garnish (optional)

Instructions

  1. Prepare the Ingredients:
    • If using, chop the onion and slice the kielbasa.
  2. Layer the Casserole:
    • In the Crockpot, start by layering half of the frozen pierogi at the bottom.
    • Add half of the sliced kielbasa and half of the chopped onion.
    • Sprinkle with half of the cheese.
  3. Mix the Sauce:
    • In a bowl, combine the sour cream, cream of mushroom soup (if using), chicken broth, garlic powder, salt, and pepper. Mix well.
  4. Repeat Layers:
    • Pour half of the sauce over the first layer in the Crockpot.
    • Repeat the layering process with the remaining pierogi, kielbasa, onion, and cheese. Pour the rest of the sauce on top.
  5. Cook:
    • Cover the Crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until everything is heated through and the pierogi are tender.
  6. Serve:
    • Once cooked, gently stir to combine. Serve hot, garnished with fresh parsley or chives if desired.

  • Feel free to add other vegetables like spinach or mushrooms for extra flavor and nutrition.
  • You can adjust the seasoning according to your taste.
