Cucumber Salad

Ingredients:

  • 2 large cucumbers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup white vinegar
  • 2 tbsp sugar
  • 1/4 cup sour cream
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Prepare Vegetables:
    • Thinly slice the cucumbers and red onion. You can use a mandoline for consistent thin slices.
    • Place the cucumber and onion slices in a large bowl.
  2. Make the Dressing:
    • In a small bowl, whisk together the white vinegar, sugar, sour cream, olive oil, salt, and black pepper until the sugar is dissolved and the dressing is well combined.
  3. Combine Salad:
    • Pour the dressing over the cucumber and onion slices. Add the chopped fresh dill.
    • Toss everything together until the cucumbers and onions are evenly coated with the dressing.
  4. Rest (Optional):
    • For best flavor, cover the bowl and let the salad rest in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld.
  5. Serve:
    • Transfer the cucumber salad to a serving bowl or platter.
    • Garnish with additional fresh dill if desired.
    • Serve chilled.
