Ingredients:

For the crust:

  • 1 ½ cups chocolate cookie crumbs (like Oreos or chocolate graham crackers)
  • ½ cup unsalted butter, melted

For the cheesecake filling:

  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup fresh strawberries, pureed
  • ¼ cup chocolate syrup

Instructions:

  1. Prepare the Crust:

    • Preheat your oven to 325°F (160°C).
    • In a medium bowl, combine the chocolate cookie crumbs and melted butter. Stir until the crumbs are fully coated in the butter and the mixture resembles wet sand.
    • Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
    • Bake the crust for 10 minutes, then remove it from the oven and let it cool while you prepare the filling.
  2. Prepare the Cheesecake Filling:

    • In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
    • Add the granulated sugar and vanilla extract. Beat until fully combined.
    • Add the eggs one at a time, mixing well after each addition. Scrape the sides of the bowl as needed to ensure everything is evenly combined.
  3. Make the Strawberry Swirl:

    • Puree the fresh strawberries in a blender or food processor until smooth. You can strain it through a fine sieve to remove any seeds if desired.
    • Mix the strawberry puree with 2 tablespoons of the cheesecake batter to thin it out slightly, making it easier to swirl into the batter.
  4. Assemble the Cheesecake:

    • Pour the cheesecake batter into the cooled crust.
    • Drop spoonfuls of the strawberry puree over the cheesecake batter, then use a knife or skewer to gently swirl the puree into the batter to create a marbled effect.
    • Drizzle chocolate syrup over the top of the cheesecake and swirl it again gently for an extra decadent touch.
  5. Bake the Cheesecake:

    • Place the cheesecake in the preheated oven and bake for 50-60 minutes, or until the edges are set but the center is still slightly jiggly. If you gently shake the pan, the cheesecake should have a slight wobble in the middle.
    • Turn off the oven, crack the oven door, and let the cheesecake cool for about an hour. This helps prevent cracks in the surface.
  6. Chill the Cheesecake:

    • After cooling, transfer the cheesecake to the refrigerator and chill for at least 4 hours, or preferably overnight, to let the flavors meld and the cheesecake set fully.
  7. Serve:

    • Once the cheesecake is fully chilled and set, remove it from the springform pan. Slice and serve!
