Ingredients:

For the Cake:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup (120ml) whole milk

For the Chocolate Coating:

  • 3 cups (375g) powdered sugar
  • 1/2 cup (50g) unsweetened cocoa powder
  • 3/4 cup (180ml) boiling water
  • 1 tablespoon unsalted butter

For the Coconut Coating:

  • 3 cups (300g) desiccated coconut

Instructions:

  1. Prepare the Cake:
    • Preheat the oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
    • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the vanilla extract.
    • Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
    • In a separate bowl, sift together the all-purpose flour and baking powder. Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients.
    • Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Prepare the Chocolate Coating:
    • Sift the powdered sugar and unsweetened cocoa powder into a large bowl.
    • Add the boiling water and butter, and stir until the mixture is smooth and well combined.
  3. Assemble the Lamingtons:
    • Cut the cooled cake into squares (approximately 16 pieces).
    • Place the desiccated coconut in a shallow bowl.
    • Using a fork or skewer, dip each cake square into the chocolate coating, ensuring it is fully coated. Allow any excess to drip off.
    • Roll the coated cake squares in the desiccated coconut until fully covered. Place on a wire rack to set.
  4. Serve:
    • Allow the Lamingtons to set for at least 30 minutes before serving.
