Ingredients:
For the Cake:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 cups (250g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup (120ml) whole milk
For the Chocolate Coating:

- 1/2 cup (50g) unsweetened cocoa powder
- 3/4 cup (180ml) boiling water
- 1 tablespoon unsalted butter
For the Coconut Coating:
- 3 cups (300g) desiccated coconut
Instructions:
- Prepare the Cake:
- Preheat the oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the vanilla extract.
- Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
- In a separate bowl, sift together the all-purpose flour and baking powder. Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients.
- Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the Chocolate Coating:
- Sift the powdered sugar and unsweetened cocoa powder into a large bowl.
- Add the boiling water and butter, and stir until the mixture is smooth and well combined.
- Assemble the Lamingtons:
- Cut the cooled cake into squares (approximately 16 pieces).
- Place the desiccated coconut in a shallow bowl.
- Using a fork or skewer, dip each cake square into the chocolate coating, ensuring it is fully coated. Allow any excess to drip off.
- Roll the coated cake squares in the desiccated coconut until fully covered. Place on a wire rack to set.
- Serve:
- Allow the Lamingtons to set for at least 30 minutes before serving.
