Preparation Time:

  • Preparation Time: 20 minutes
  • Chilling Time: 4 hours (or overnight)
  • Total Time: 4 hours 20 minutes

Intensity:

  • Difficulty Level: Medium

Ingredients:

Crust:

  • 1 package (12 ounces) King’s Hawaiian sweet rolls
  • 1/4 cup unsalted butter, melted

Filling:

  • 24 ounces (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 4 large eggs
  • 1 cup sour cream

Instructions:

  1. Prepare Crust:
    • Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
    • In a food processor, pulse the King’s Hawaiian sweet rolls until they form fine crumbs. You should have about 2 cups of crumbs.
    • In a medium bowl, combine the crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan to form an even crust.
  2. Bake Crust:
    • Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while preparing the filling.
  3. Prepare Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar, beating until well combined.
    • Add the vanilla extract and almond extract, mixing until incorporated.
    • Add the eggs one at a time, beating well after each addition. Finally, fold in the sour cream until the mixture is smooth and creamy.
  4. Assemble and Bake:
    • Pour the filling over the cooled crust in the springform pan.
    • Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. The top should be lightly golden.
  5. Cool and Chill:
    • Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours, or overnight, to allow it to set fully.
  6. Serve:
    • Run a knife around the edge of the pan before removing the sides of the springform pan. Slice and serve chilled. Enjoy!
