Ingredients:

For the Cinnamon Rolls:

  • 1 cup sourdough discard
  • 1/4 cup milk (warm)
  • 1/4 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon

For the Filling:

  • 1/4 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon

For the Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (to desired consistency)

Instructions:

1. Prepare the Dough:

  1. Mix Wet Ingredients: In a large bowl, combine the sourdough discard, warm milk, sugar, melted butter, and egg. Mix well.
  2. Add Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.

2. Roll Out the Dough:

  • Turn the dough onto a floured surface and knead gently for a minute until smooth. Roll it out into a rectangle (about 1/4 inch thick).

3. Prepare the Filling:

  1. Spread the Filling: Spread the softened butter over the rolled-out dough. In a small bowl, mix the brown sugar and cinnamon together, then sprinkle evenly over the buttered dough.

4. Roll and Cut:

  • Starting from one long edge, tightly roll the dough into a log. Pinch the seam to seal. Cut the log into 12 equal pieces.

5. Second Rise:

  • Place the rolls in a greased 9×13-inch baking dish. Cover with a clean towel and let them rise in a warm place for about 30-60 minutes, or until doubled in size.

6. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

7. Bake:

  • Bake the cinnamon rolls in the preheated oven for 20-25 minutes, or until golden brown.

8. Prepare the Frosting:

  1. Mix Ingredients: In a medium bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined. Add milk a little at a time until you reach your desired consistency.

9. Frost and Serve:

  • Once the cinnamon rolls are out of the oven, allow them to cool for a few minutes before spreading the cream cheese frosting over the top.
