Here’s a rich, fudgy Double Chocolate Coca-Cola Cake with a moist crumb and deep chocolate flavor, thanks to the Coca-Cola and cocoa combo. It’s a Southern classic!

Double Chocolate Coca-Cola Cake

Ingredients:

Cake:

  • 1 cup Coca-Cola (not diet)

  • ½ cup vegetable oil

  • 1 stick (½ cup) unsalted butter

  • 3 tbsp unsweetened cocoa powder

  • 2 cups granulated sugar

  • 2 cups all-purpose flour

  • ½ tsp salt

  • 2 large eggs

  • ½ cup buttermilk (*or substitute: ½ cup milk + ½ tbsp vinegar, let sit 5 mins*)

  • 1 tsp baking soda

  • 1 tsp vanilla extract

Optional Chocolate Frosting:

  • ½ stick (¼ cup) butter

  • 3 tbsp cocoa powder

  • 6 tbsp Coca-Cola

  • 3 cups powdered sugar

  • 1 tsp vanilla extract

  • ½ cup chopped pecans (optional, for topping)


Directions:

  1. Prep:

    • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.

  2. Make the Cake Batter:

    • In a saucepan, combine Coca-Cola, oil, butter, and cocoa powder. Heat over medium until butter melts, stirring occasionally. Remove from heat.

    • In a large bowl, whisk together sugar, flour, and salt. Pour in the warm Coca-Cola mixture and stir until smooth.

    • In a separate bowl, beat eggs, buttermilk, baking soda, and vanilla. Add to the batter and mix well (batter will be thin).

  3. Bake:

    • Pour batter into the prepared pan. Bake for 30-35 minutes, or until a toothpick comes out clean.

  4. Optional Frosting (make while cake bakes):

    • In a saucepan, melt butter, cocoa, and Coca-Cola over medium heat. Whisk in powdered sugar and vanilla until smooth.

    • Pour warm frosting over the hot cake as soon as it comes out of the oven. Sprinkle with pecans if using.

  5. Serve:

    • Let cool slightly before slicing. Perfect with vanilla ice cream!


Tips:

  • Extra chocolatey? Add ½ cup chocolate chips to the batter.

  • No buttermilk? Use the milk + vinegar substitute listed above.

  • Storage: Cover at room temp for up to 3 days, or refrigerate for longer freshness.
