Double Chocolate Coca-Cola Cake

🍫 A moist, fudgy chocolate cake with a rich Coca-Cola glaze—old-school Southern decadence at its finest!


Ingredients

For the Cake:

  • 1 cup Coca-Cola (not diet)

  • ½ cup vegetable oil

  • 1 stick (½ cup) butter

  • 3 tbsp unsweetened cocoa powder

  • 2 cups granulated sugar

  • 2 cups all-purpose flour

  • ½ tsp salt

  • 2 large eggs

  • ½ cup buttermilk (or ½ cup milk + ½ tbsp vinegar, let sit 5 mins)

  • 1 tsp baking soda

  • 1 tsp vanilla extract

For the Coca-Cola Glaze:

  • ½ cup Coca-Cola

  • ¼ cup butter

  • 2 tbsp cocoa powder

  • 2 cups powdered sugar

  • 1 tsp vanilla extract

  • Pinch of salt

Optional:

  • ½ cup mini chocolate chips (fold into batter)

  • Vanilla ice cream (for serving)


Instructions

1. Make the Cake:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.

  2. In a saucepan, combine Coca-Cola, oil, butter, and cocoa. Heat over medium until butter melts, stirring occasionally. Remove from heat.

  3. In a large bowl, whisk sugar, flour, and salt. Pour in the warm Coke mixture and stir until smooth.

  4. In a separate bowl, beat eggs, buttermilk, baking soda, and vanilla. Add to the batter and mix well (batter will be thin).

  5. Pour into prepared pan. Bake 30-35 minutes until a toothpick comes out clean.

2. Make the Glaze:

  • While cake bakes, combine Coca-Cola, butter, and cocoa in a saucepan. Bring to a boil, then reduce heat and simmer 2 minutes.

  • Remove from heat and whisk in powdered sugar, vanilla, and salt until smooth.

3. Finish the Cake:

  • Poke warm cake all over with a fork. Pour glaze evenly over the top.

  • Let cool 15 minutes before slicing. Serve with ice cream for extra indulgence!
