Drunken Noodles (Pad Kee Mao) Recipe

Ingredients

  • 8 oz wide rice noodles
  • 2 tbsp vegetable oil
  • 3-4 cloves garlic, minced
  • 1-2 Thai bird’s eye chilies, chopped (adjust to taste)
  • 1 cup bell peppers, sliced (red, green, or a mix)
  • 1 cup broccoli florets (or other veggies of your choice)
  • 1 cup cooked protein (chicken, shrimp, tofu, or beef)
  • 2-3 tbsp soy sauce
  • 1-2 tbsp oyster sauce
  • 1 tbsp fish sauce (optional)
  • 1 tbsp dark soy sauce (for color)
  • 1 tbsp sugar (or to taste)
  • Fresh basil leaves (Thai basil preferred)
  • Lime wedges (for serving)

Instructions

  1. Prepare the Noodles:
    • Cook the rice noodles according to package instructions. Drain and rinse under cold water to stop cooking. Set aside.
  2. Stir-Fry the Ingredients:
    • In a large skillet or wok, heat the vegetable oil over medium-high heat.
    • Add the minced garlic and chilies, stirring quickly until fragrant (about 30 seconds).
    • Add the sliced bell peppers and broccoli (or other vegetables) and stir-fry for about 2-3 minutes until slightly tender.
  3. Add Protein and Noodles:
    • Add the cooked protein to the skillet, stirring to combine.
    • Toss in the cooked rice noodles, along with the soy sauce, oyster sauce, fish sauce (if using), dark soy sauce, and sugar. Stir-fry for another 2-3 minutes until everything is well combined and heated through.
  4. Finish with Basil:
    • Remove from heat and stir in a handful of fresh basil leaves until wilted.
  5. Serve:
    • Plate the drunken noodles and serve with lime wedges on the side for squeezing over.
