Easiest Taco Soup Recipe

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes (with juice)
  • 1 can (10 oz) diced tomatoes and green chilies (like Ro-Tel)
  • 1 packet taco seasoning (about 1 oz)
  • 2 cups beef broth (or chicken broth)
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips

Instructions

  1. Cook the Meat: In a large pot or Dutch oven, cook the ground beef and chopped onion over medium heat until the meat is browned and the onion is soft. Drain any excess fat.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add Ingredients: Add the black beans, kidney beans, corn, diced tomatoes, diced tomatoes and green chilies, taco seasoning, and broth. Stir to combine.
  4. Simmer: Bring the mixture to a simmer. Reduce heat and let it cook for about 15-20 minutes, stirring occasionally. If it gets too thick, add a little more broth or water.
  5. Taste and Adjust: Season with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and add your favorite toppings, like cheese, sour cream, avocado, cilantro, or tortilla chips.

Tips

  • For a spicier kick, add some jalapeños or a dash of hot sauce.
  • This soup can be made ahead of time and reheated; it often tastes even better the next day!
