Ingredients

    • 1 box (18.25 oz) white or yellow cake mix
    • 3 large eggs
    • 1 cup water
    • 1/2 cup vegetable oil

    • 1 box (3 oz) flavored gelatin (choose a pastel color like strawberry, lime, or lemon)
    • 1 cup boiling water
    • 1/2 cup cold water
  • For the topping:
    • 2 cups whipped topping (Cool Whip or homemade whipped cream)
    • Pastel-colored sprinkles, jelly beans, or marshmallow bunnies (for decoration)

Instructions

  1. Bake the cake:
    • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
    • In a large mixing bowl, combine the cake mix, eggs, water, and vegetable oil. Mix until smooth.
    • Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool completely in the pan.
  2. Prepare the gelatin filling:
    • In a small bowl, dissolve the gelatin in 1 cup of boiling water. Stir until completely dissolved.
    • Add 1/2 cup of cold water and stir to combine.
  3. Poke the cake:
    • Use the handle of a wooden spoon or a skewer to poke holes all over the top of the cooled cake, spacing them about 1 inch apart.
    • Slowly pour the gelatin mixture over the cake, making sure it seeps into the holes. Refrigerate the cake for at least 2 hours to set the gelatin.
  4. Add the topping:
    • Spread the whipped topping evenly over the chilled cake.
    • Decorate with pastel-colored sprinkles, jelly beans, or marshmallow bunnies for a festive Easter touch.
  5. Serve:
    • Slice and serve chilled. Store any leftovers in the fridge.
