Easter Day Jello Cookies

Ingredients

  • 1 cup (230g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups (315g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (85g) Jello powder (use different colors/flavors for variety, e.g., strawberry, lime, lemon)
  • Optional: Sprinkles or colored sugar for decorating

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Make the cookie dough:
    • In a large bowl, cream together the softened butter and sugar until light and fluffy.
    • Beat in the egg and vanilla extract until well combined.
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
  3. Add the Jello powder:
    • Divide the dough into portions (depending on how many colors/flavors you want to use).
    • Mix each portion with 1-2 tablespoons of Jello powder until the dough is evenly colored and flavored.
  4. Shape the cookies:
    • Roll the dough into 1-inch balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
    • Flatten each ball slightly with the bottom of a glass or your hand. If desired, press sprinkles or colored sugar onto the tops of the cookies.
  5. Bake:
    • Bake for 8-10 minutes, or until the edges are lightly golden. Be careful not to overbake, as the cookies should stay soft.
  6. Cool and serve:
    • Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
