Ingredients:

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 1 cup white chocolate or vanilla glaze
  • 2 tablespoons colorful sprinkles (Easter-themed if desired)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
    • Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. Prepare the Dough:

    • In a large bowl, cream together the softened butter and powdered sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
    • Add the vanilla extract and mix to combine.
    • Gradually add the flour and salt, mixing until just incorporated. The dough should be soft and a bit crumbly but should hold together when pressed.
  3. Shape the Cookies:

    • Scoop out small portions of the dough and roll them into balls (about 1-inch in diameter). You can use a cookie scoop for even portions.
    • Place the dough balls onto the prepared baking sheet, spacing them about 1 inch apart.
    • Gently flatten each cookie ball with the bottom of a glass or your fingers, creating a little disc shape.
  4. Bake:

    • Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies just begin to turn golden. The centers should remain light in color.
    • Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  5. Decorate:

    • Once the cookies are fully cooled, dip each cookie into the white chocolate or vanilla glaze. You can also drizzle the glaze over the cookies if you prefer.
    • Immediately sprinkle the colorful sprinkles on top of the glaze before it hardens, creating a festive touch.
  6. Serve:

    • Let the glaze set for about 10-15 minutes before serving. These cookies can be stored in an airtight container for up to a week.
