Here’s an easy and delicious Breakfast Casserole recipe using shredded potato hash browns, sausage (or bacon), and mozzarella cheese. It’s perfect for feeding a crowd or meal prepping for the week!

Easy Breakfast Casserole Recipe

Ingredients:

  • 3 cups shredded potato hash browns (thawed if frozen)
  • 1 pound breakfast sausage (or 8-10 slices cooked bacon, crumbled)
  • 1 small onion, diced (optional)
  • 1 bell pepper, diced (optional)
  • 6 large eggs
  • 1 cup milk (or half-and-half for extra creaminess)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika (optional, for a smoky flavor)
  • 2 cups shredded mozzarella cheese (or a mix of cheddar and mozzarella)
  • Optional toppings: chopped green onions, hot sauce, or sour cream

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Cook the sausage (or bacon):
    • In a skillet over medium heat, cook the breakfast sausage until browned and crumbled. If using bacon, cook until crispy, then crumble. Drain excess grease.
    • If using onions and bell peppers, sauté them in the same skillet until softened (optional).
  3. Layer the hash browns:
    • Spread the shredded hash browns evenly in the bottom of the greased baking dish.
  4. Add the sausage (or bacon):
    • Sprinkle the cooked sausage (or bacon) and sautéed veggies (if using) over the hash browns.
  5. Prepare the egg mixture:
    • In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika until well combined.
  6. Assemble the casserole:
    • Pour the egg mixture evenly over the hash browns and sausage.
    • Sprinkle the shredded mozzarella cheese on top.
  7. Bake:
    • Bake in the preheated oven for 35-45 minutes, or until the eggs are set and the top is golden brown. You can test by inserting a knife into the center—if it comes out clean, it’s done.
  8. Serve:
    • Let the casserole cool for 5-10 minutes before slicing. Garnish with chopped green onions or serve with hot sauce or sour cream if desired.

This breakfast casserole is hearty, cheesy, and customizable—feel free to add other veggies like spinach, mushrooms, or tomatoes. It’s also great for making ahead and reheating throughout the week. Enjoy! 😊
