Easy Cheesy Ground Beef Casserole

Ingredients:

  • 1 lb (450g) ground beef (or turkey/chicken)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15oz) can tomato sauce (or marinara)
  • 1 tsp Italian seasoning
  • ½ tsp salt & pepper (to taste)
  • 1 (16oz) package rotini pasta (or elbow macaroni)
  • 1½ cups shredded cheddar cheese (or mozzarella blend)
  • ½ cup sour cream (or Greek yogurt)
  • ¼ cup grated Parmesan cheese

Optional Add-Ins:

  • 1 cup diced bell peppers
  • ½ cup sliced mushrooms
  • 1 tsp red pepper flakes (for heat)

Instructions:

1️⃣ Cook Pasta & Beef:

  • Preheat oven to 375°F (190°C).
  • Cook pasta al dente (1-2 mins less than package instructions), drain, and set aside.
  • In a skillet, brown ground beef with onion and garlic over medium heat. Drain excess fat.

2️⃣ Mix Sauce & Combine:

  • Stir in tomato sauce, Italian seasoning, salt, and pepper. Simmer 2 mins.
  • In a large bowl, mix cooked pasta, beef sauce, sour cream, and 1 cup cheddar cheese.

3️⃣ Assemble & Bake:

  • Transfer to a 9×13″ baking dish, top with remaining cheddar & Parmesan.
  • Cover with foil and bake 20 mins. Uncover, broil 2-3 mins for a golden crust.

4️⃣ Serve:

  • Garnish with fresh parsley or basil.
