Easy Chicken Noodle Casserole 🍗🍜
A creamy, cheesy, comfort-food classic that’s perfect for weeknights! Uses simple ingredients (including leftover or rotisserie chicken) and comes together in 30 minutes.
Ingredients

12 oz (340g) egg noodles, cooked al dente

3 cups cooked chicken, diced (rotisserie works great!)

1 (10.5oz) can cream of chicken soup (or mushroom)

1 cup sour cream (or Greek yogurt)

½ cup chicken broth

1½ cups shredded cheddar cheese, divided

1 cup frozen peas (or mixed veggies)

½ tsp garlic powder
-
½ tsp onion powder
-
Salt & pepper to taste

½ cup crushed crackers or breadcrumbs (for topping)

2 tbsp melted butter (for topping)
Instructions
1️⃣ Prep

Preheat oven to 350°F (175°C).

Cook noodles 1-2 minutes less than package directions (they’ll finish baking). Drain.
2️⃣ Mix

In a large bowl, combine soup, sour cream, broth, 1 cup cheese, peas, and spices.

Fold in noodles and chicken until evenly coated.
3️⃣ Bake

Transfer to a 9×13-inch baking dish.

Top with remaining ½ cup cheese, then crushed crackers mixed with melted butter.

Bake 20-25 mins until bubbly and golden.
4️⃣ Broil (Optional)

Broil 1-2 mins for extra crispy topping.
