Easy Chicken Noodle Casserole 🍗🍜

A creamy, cheesy, comfort-food classic that’s perfect for weeknights! Uses simple ingredients (including leftover or rotisserie chicken) and comes together in 30 minutes.


Ingredients

*(Serves 6-8)*

  • 12 oz (340g) egg noodles, cooked al dente

  • 3 cups cooked chicken, diced (rotisserie works great!)

  • 1 (10.5oz) can cream of chicken soup (or mushroom)

  • 1 cup sour cream (or Greek yogurt)

  • ½ cup chicken broth

  • 1½ cups shredded cheddar cheese, divided

  • 1 cup frozen peas (or mixed veggies)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt & pepper to taste

  • ½ cup crushed crackers or breadcrumbs (for topping)

  • 2 tbsp melted butter (for topping)


Instructions

1️⃣ Prep

  • Preheat oven to 350°F (175°C).

  • Cook noodles 1-2 minutes less than package directions (they’ll finish baking). Drain.

2️⃣ Mix

  • In a large bowl, combine soup, sour cream, broth, 1 cup cheese, peas, and spices.

  • Fold in noodles and chicken until evenly coated.

3️⃣ Bake

  • Transfer to a 9×13-inch baking dish.

  • Top with remaining ½ cup cheese, then crushed crackers mixed with melted butter.

  • Bake 20-25 mins until bubbly and golden.

4️⃣ Broil (Optional)

  • Broil 1-2 mins for extra crispy topping.

✅ Make ahead: Assemble, refrigerate, and bake later (add 10 mins).
✅ Lighter version: Use low-fat soup, Greek yogurt, and less cheese.
✅ Add-ins: Try sautéed mushrooms, bacon, or hot sauce for kick!
