Easy Layered Taco Bake

Ingredients:
- 1 pound ground beef
- 1 packet taco seasoning mix
- 3/4 cup water
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (10 ounces) diced tomatoes with green chilies, drained
- 2 cups shredded Mexican blend cheese
- 4 large flour tortillas
- 1 cup sour cream
- 1 cup salsa
- Optional toppings: chopped lettuce, diced tomatoes, sliced black olives, chopped green onions, sliced jalapeños
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Cook Ground Beef:
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the taco seasoning mix and water to the skillet. Stir to combine and cook according to the seasoning packet instructions, usually about 5 minutes.
- Stir in the black beans and diced tomatoes with green chilies. Cook until heated through.
- Assemble Taco Bake:
- In a 9×13-inch baking dish, start with a layer of a flour tortilla. You may need to cut the tortillas to fit the dish.
- Spread a third of the beef mixture over the tortilla, then sprinkle with 1/2 cup of cheese.
- Repeat the layers two more times, ending with the final flour tortilla on top.
- Bake:
- Spread the sour cream evenly over the top tortilla, then sprinkle with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let it cool for a few minutes. Cut into squares and serve with salsa and your favorite optional toppings.
