Here’s a simple and delicious Strawberry Slab Pie recipe! This easy-to-make dessert is perfect for a crowd and combines fresh strawberries with a buttery, flaky crust.

Easy Strawberry Slab Pie

Ingredients:

For the crust:

  • 2 boxes refrigerated pie crusts (or homemade pie crust, if preferred)
  • 1 tablespoon granulated sugar (optional, for sprinkling on top)

For the filling:

  • 4 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 egg (for egg wash, optional)

Instructions:

  1. Preheat the oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the crust:

    • Roll out one package of the pie crusts on a lightly floured surface to fit the bottom of a 9×13-inch baking dish. Press the crust into the dish and trim any excess dough.
    • If using two pie crusts, unroll the second package and cut it into strips for a lattice topping, or you can lay the whole crust on top of the filling.
  3. Prepare the filling:

    • In a large mixing bowl, combine the sliced strawberries, sugar, cornstarch, vanilla extract, lemon juice, and salt. Stir until the strawberries are evenly coated and the mixture thickens slightly.
  4. Assemble the pie:

    • Pour the strawberry mixture into the prepared pie crust in the baking dish.
    • If you’re using a lattice top, create a crisscross pattern with the pie crust strips, laying them across the filling. Otherwise, just place the second pie crust over the filling and seal the edges, pinching them together.
    • Optional: Brush the top crust with a lightly beaten egg for a golden, shiny finish. Sprinkle a little granulated sugar over the top for added sweetness and crunch.
  5. Bake:

    • Place the pie in the preheated oven and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. If the edges of the crust brown too quickly, cover them with aluminum foil to prevent burning.
  6. Cool and serve:

    • Let the pie cool for at least 2 hours to allow the filling to set. Once cooled, slice and serve!

Tips:

  • For extra flavor: Add a teaspoon of lemon zest to the filling for an extra citrusy kick.
  • Thicker filling: If you prefer a thicker filling, increase the cornstarch to 1/3 cup.
  • Topping ideas: Serve with a dollop of whipped cream, a scoop of vanilla ice cream, or drizzle with a strawberry glaze.
