Egg Roll in a Bowl
This Egg Roll in a Bowl is a quick, healthy, and low-carb version of your favorite egg roll without the frying! It’s packed with flavor and can be customized to suit your tastes.
Ingredients:
- 1 lb ground pork (or ground turkey/chicken)
- 1 tablespoon sesame oil (or vegetable oil)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced (or 1 teaspoon ground ginger)
- 1/2 cup carrots, julienned or shredded
- 1/2 head of cabbage, shredded (or about 4 cups pre-shredded cabbage mix)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 tablespoon hoisin sauce (optional, for added sweetness)
- 1/2 teaspoon crushed red pepper flakes (optional, for heat)
- 2 green onions, chopped (for garnish)
- Sesame seeds (optional, for garnish)
Instructions:
1. Cook the Ground Meat:
- Heat a large skillet or wok over medium-high heat. Add the ground pork (or your choice of ground meat) and cook until browned, breaking it apart with a spoon as it cooks. Once cooked through, drain any excess fat if needed.
2. Sauté the Aromatics:
- In the same pan, add the sesame oil and sauté the onion, garlic, and ginger for about 2-3 minutes until fragrant and softened.
3. Add the Vegetables:
- Add the shredded carrots and cabbage to the pan. Stir to combine with the meat and aromatics. Cook for another 4-5 minutes, until the cabbage wilts and the vegetables soften, but still retain some crunch.
4. Season:
- Stir in the soy sauce, rice vinegar, hoisin sauce (if using), and crushed red pepper flakes (if you like some heat). Adjust seasoning to taste with more soy sauce or vinegar if necessary.
5. Serve:
- Remove from heat and transfer to bowls. Garnish with chopped green onions and sesame seeds, if desired.
Tips:
- You can add other vegetables like bell peppers, mushrooms, or snap peas for more variety.
- If you want a bit more crunch, you can serve the dish with crispy wonton strips on top.
- For a vegetarian version, use tofu or tempeh instead of meat, and add additional veggies for protein.
This Egg Roll in a Bowl is not only quick and easy to make but also flavorful and satisfying. It’s the perfect healthy alternative to deep-fried egg rolls!
