🍞 Fast & Healthy Oatmeal Bread (No Flour, No Butter, Gluten-Free)

A moist, nutrient-packed bread made with oats, pumpkin, and simple ingredients—ready in minutes! Perfect for a wholesome breakfast or snack.


📝 Ingredients

  • 1 cup (90g) rolled oats (certified GF if needed)
  • 1 cup (200-250ml) warm water (adjust for consistency)
  • ½ small pumpkin (400g) – peeled, grated (or cooked & mashed)
  • 1 tbsp sweetener (honey/maple syrup/erythritol – optional)
  • 1 tsp cinnamon (optional but delicious)
  • 1 pinch salt
  • (Optional add-ins: 1 tbsp chia seeds, nuts, or raisins)

👩‍🍳 Instructions

1. Prep the Pumpkin

  • If using raw pumpkin, grate it finely.
  • If using cooked pumpkin, mash it well (no lumps).

2. Mix the Batter

  • In a bowl, combine oats, pumpkin, sweetener, cinnamon, and salt.
  • Gradually add warm water until you get a thick, porridge-like consistency.
  • (Let sit 5 mins if needed—oats will absorb moisture.)

3. Bake

  • Option 1 (Oven):
    • Preheat to 350°F (180°C).
    • Pour batter into a lined loaf pan (or shape into a round loaf on parchment).
    • Bake 25-30 mins until firm and golden.
  • Option 2 (Air Fryer):
    • Cook at 320°F (160°C) for 15-20 mins in a small pan.
  • Option 3 (Microwave):
    • Cook in a microwave-safe dish for 3-5 mins (check often).

4. Cool & Serve

  • Let rest 10 mins before slicing.
  • Enjoy warm or toasted with nut butter, yogurt, or fruit!

✨ Tips

✔ No pumpkin? Substitute mashed banana or applesauce.
✔ For extra protein, stir in 1 tbsp protein powder or nut butter.
✔ Store in the fridge for 3-4 days or freeze slices for later.
